Jackie's Tamale Casserole - A Blue Lake Ranch Favorite!

This morning we had an email from a Blue Lake Ranch guest who visited with us in July. She has been craving Jackie's fabulous Tamale Casserole we served at breakfast one morning and finding herself with some extra tamales in her refigerator requested the recipe. With no further ado:

TAMALE CASSEROLE
Jackie Crawford, Blue Lake Ranch


12 tamales, finely shredded (use food processor at low speed)
2 cans cream of mushroom soup
2 cans chicken stock
2 cups shredded cheese
5 eggs

Beat together mushroom soup, chicken stock, eggs and cheese. Fold into tamales and pour mix into a deep baking dish. Bake covered at 350 degrees for about 50 minutes or until bubbly and cooked through.

Serve with sour cream and fresh salsa! Enjoy!
